Food and wine pairing is not a strict rule, but a balancing act between flavors, textures and aromas. Several types of agreements exist: mirror, land or even opposition. In reality, most agreements remain subjective and specific to each individual. All we have to do is learn to understand these marriages and to discover what our tastes are. This is what the head sommelier at Ô Chateau, Laury, strives to highlight during the Accords and Desaccords tasting.
Whether in the warm atmosphere of our Vinotheque or our Vaulted Cellar, you will see in the first part you will discover the fundamentals with 3 wines and 3 agreements: mirror, opposition, soil. They will serve as the starting point for your experience. The mirror agreement is based on similarity: also known as a complementarity agreement. It aims to intensify similar flavors, for example red wine and fried mushrooms.
On the contrary, the opposition agreement aims to create a contrast: the wine balances or counterbalances certain characteristics of the dish; an acidic white wine with a hard cheese such as parmesan for example.
As far as the local agreement is concerned, it is based on the obvious: dishes and wines from the same region such as Manzanilla accompanied by olives combine naturally.
The tasting then continues with 3 wines and 3 bites, carefully selected to stimulate discussions, comparisons and discoveries. During this second part, you will learn to highlight your personal impressions, to grasp the subtleties that make certain pairings harmonious, allowing you to shape and identify your own perspective on the food & wine pairings you prefer.
